Kitchen II

A Chulha, typical cooking arrangements in a rural Indian home. This one is equivalent to a four ring cooker. It’s a good deal more powerful than a typical gas or electric cooker, and with room for bigger pots, but a lot more trouble to use: there’s a lot of fetching and storing of wood to be done, and considerable expertise required to control the delivery of heat. You need to know the burning characteristics of each kind of wood, for a start.

October 2005, but could have been yesterday.
